Our journey through South Australia began with an unforgettable first day, filled with dolphin spotting at Dolphin Sanctuary Kayak Tours. The serene morning paddle offered close encounters with these playful creatures. From there, we ventured into Adelaide to enjoy the bustling Central Market for a delicious lunch, followed by some retail therapy at the lively Rundle Mall. The afternoon took us to the Barossa Valley, where we were treated to a hosted barbecue at the stunning Barossa Shiraz Estate. Nestled in self-contained cottages surrounded by breathtaking scenery, the estate offered a tranquil retreat. A few early risers were rewarded with a spectacular sunrise, shared with a curious kangaroo—a magical moment that set the tone for our trip.

Next, we flew to Kangaroo Island, a short journey from Adelaide that revealed a world of natural beauty and wildlife. Known as “The Galapagos of Australia,” the island dazzled us with its diverse landscapes and thriving wildlife. From kangaroos to seals, every encounter was awe-inspiring. Our stay at Sea Dragon Lodge, a boutique property on 250 acres of private land, was a highlight. Surrounded by kangaroos and overlooking the ocean, it felt like a secluded paradise. We explored the island’s wonders, including Seal Bay, and enjoyed a visit to the Kangaroo Island Gin Distillery, where we learnt about botanicals and sampled exquisite gins. The island’s stunning scenery, wildlife, and culinary delights made it a destination we’ll enthusiastically recommend to anyone seeking a slice of South Australian paradise.

Exploring South Australia and the Northern Territory

Leaving Kangaroo Island was bittersweet as we boarded the Sealink ferry back to Adelaide. Upon our return, we checked into the centrally located Sofitel Hotel, a stylish and convenient base. That evening, we dined at Fugazzi, hosted by the South Australia Tourism Committee. The meal was complemented by insights from Matthew Kurko of Small Batch Wine Tours, who shared details about premium wine experiences in the region.

The next chapter of our adventure took us from South Australia to the Northern Territory, beginning with a flight to Alice Springs. Here, we met our guides from Autopia Tours, who would lead us through the heart of Australia. Alice Springs, the gateway to the Red Centre, captivated us with its rich history, from the Telegraph Station to the Royal Flying Doctors Service. It was the perfect starting point for our outback exploration.

Our journey into the outback began with the Mereenie Loop, a scenic route from Alice Springs to Kings Canyon. Along the way, we stopped for hikes and refreshing swims in waterholes before arriving at the Discovery Kings Canyon Resort. The resort offered beautiful, spacious rooms with bathroom views that were simply to die for. Before dinner, we gathered at the viewing platform to enjoy drinks and canapés while watching the mesmerising Bruce Munro art installation, Light Towers, at sunset. The evening was capped off by a lightning storm viewed from the comfort of a bathtub—an unforgettable moment that showcased the sheer beauty and diversity of Australia.

The following morning, we explored Kings Canyon National Park, where the recent rainfall transformed the landscape with stunning waterfalls and flowing creeks. After lunch and an informative presentation at Curtin Springs, we continued to Ayers Rock Resort and checked into the luxurious Sails in the Desert Hotel. With time on our side, we indulged in a well-earned swim before heading out for an immersive dining experience. Our chosen activity was the award-winning Field of Light by Bruce Munro, an extraordinary installation of over 50,000 glowing spindles of light set against the majestic backdrop of Uluru. As the sun set, we enjoyed a delicious meal while the desert came alive with light—a truly magical and unforgettable experience.
